Comments

- Temperature Control: Ok. Gauges noted. Monitoring is being conducted. Logs are on site.
- Mechanical Dishwasher: (High Temperature) = Hot.
- Wiping cloth storage: Ok.
- Use 200ppm Quats solution and make as per manufacturer's instructions. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer. Cloths, used on food contact surfaces, are to be kept completely submerged in the sanitizer solution.
- Food Storage: Ok. Stock rotation discussed. Expiration dates are to be monitored.
- Sanitary Facilities: Ensure single use towels are be stored inside dispensers.
- Chemical Storage: Ok. All items are to be stored in designated areas.
- Staff Illness/Hygiene: Discussed.
- Sanitation: Refer to Violation notes.
- Structurally: No concerns noted this date..
- Pest Control: Monitoring is being conducted. Reports reviewed.
