Observation (CORRECTED DURING INSPECTION): Sour cream and guacamole were at 7C. Ice level was insufficient to contact the inserts.
Corrective Action(s): Ensure all potentially hazardous foods are stored at 4C or less at all times to prevent the growth of pathogens and or the formation of toxins. Use an ice and water mixture and ensure the mixture completely surrounds the inserts. Ice was added at the time of inspection and food items were probed at 4C.

Observation (CORRECTED DURING INSPECTION): Back handwash station was used to store boxes and gloves. Paper towels dispenser was also out of paper towels.
Corrective Action(s): Ensure handwash stations are easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Items were removed and single use paper towels were refilled at the time of inspection.

Observation: Back shelving unit was lined with cardboard.
Corrective Action(s): Cardboard is not a suitable shelving material - all surfaces must be smooth, non-absorbent, and easily cleanable.

Comments

-Walk-in cooler was at 2C.
-Prep cooler was at 4C (inserts and bottom).
-Chest freezer was at -25C.
-Temperatures are checked and recorded daily.
-High temperature dishwasher had a final rinse temperature of 74C on the dish surface (minimum 71C required for proper sanitizing).
-Front handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats dispenser was tested at 200ppm.
-Quats sanitizer spray bottle was properly labelled and tested at 200ppm.
-Foods properly stored off the floor, covered, and protected from contamination.
-General sanitation satisfactory - ensure staff pay more attention to the area along the floors and wall and walls in the walk-in cooler.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
