Observation (CORRECTED DURING INSPECTION): There is no designated shelving unit or drainboard for air drying of equipment, utensils, and other food contact surfaces after sanitizing. The operator stated that the staff air dries in the third compartment of the three compartment sink. There must be a designated area for air drying.
Corrective Action(s): Provide an overhead shelving unit for air drying of equipment, utensils, and other food contact surfaces.

Comments

- General sanitation satisfactory.
- Handwashing station (front) supplied with cold/hot running water, soap, and paper towels. Soap dispenser is loose; properly mount the dispenser on the wall.
- Three compartment sink available for manual dishwashing. QUAT sanitizer available at 200ppm concentration.
- Surface sanitizer available in designated red buckets at 200ppm QUAT concentration.
- Dry storage area has adequate space and wire racks. Dry food items stored min 15cm (6inches) off the floor.
- No signs of pest activity at the time of the inspection. A professional pest control company implements pest management system.
- Could not verify FOODSAFE training. Manager is to provide a copy of FOODSAFE certificate or equivalent during the follow up inspection.

Temperature control:
- Upright stainless steel cooler (back) = 4C
- Prep cooler (front) = 4C
- Undercounter cooler (front) = 4C
- Hot holding units (soups, bacon) > or = 60C
- Daily temperature logs kept up to date.
