Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)] (Underside of condenser panel in ice machine had mould/mildew growth.)
Comments

- Ice machine has been cleaned and sanitized. Ensure this is done more frequently to prevent growth of mould/mildew.
- Dough machine was observed to be clean and free of debris - good. Ensure dough machine is cleaned and sanitized after each use.
- Dishwasher had 100 ppm chlorine residual detected at dish surface after rinse cycle. Good. Ensure test strips are used to monitor concentration of sanitizer every day.
- Bleach sanitizer solution available in bucket at 200 ppm. Good - ensure to change solution every 4 hours or sooner if solution becomes visibly dirty or cloudy.
- All food stored in coolers and freezers were properly covered
- Upright domestic freezer has been defrosted. Ensure hot food is properly cooled before placing into freezer.

Note: Proper cooling: Cool from 60C to 20C within 2 hours, then from 20C to 4C within 4 hours in the refrigerator or freezer.
