Observation (CORRECTED DURING INSPECTION): Dirty rags were kept on food counters in the kitchen.
Corrective Action(s): Ensure wash cloths are kept in the bleach sanitizer to prevent the growth of pathogens and prevent cross contamination. Operator removed the rags at the time of inspection. Sanitize all counters immediately.

Comments

Routine inspection conducted. Facility is not open for dine-in or walk-ins.
Dining in seats have been tied up and the tables are blocked.

Operator only operates for large catering orders.

Temperatures:
All coolers are functional and maintaining at least 4C.
Freezers are functional and maintaining -18C or below.
Hot holding units are not in use.
Thermometers are available.

NOTE: temperature logs should be maintained to monitor temperatures of all cooling units.

Sanitation:
High temperature dishwasher achieved 71C at the dish surface after the final rinse cycle. Ensure the dishwasher is run for a couple of cycles before loading dishes to ensure adequate temperature is met for the first load.
Bleach sanitizer was available in buckets in food preparation areas - GOOD
Hand washing sinks (3) are equipped with hot and cold running water, liquid soap, and disposable paper towels.
General sanitation is good. Hard to reach areas, areas behind the cookline, under counters, under storage shelves is in good sanitary condition.

Storage:
Food is stored in containers with tight fitting lids inside coolers.
No food is stored on the floor in dry storage area.
Items for catering are dated - GOOD

No pest activity noted.
Back exit has a screen door. Waste management is adequate.
