306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: 1) Back walk-in cooler floor along wall under coffee beverage shelves observed with accumulations of food debris along floor wall connection. 2) Area below and beside freezer #3 enclosure cavity observed with accumulations of food debris and possibly black mould from migrating spilled water around mop sink. 3) Area and lowest shelf at mop sink observed with accumulations of stagnant water. Possibly spreading to adjoining areas as noted. Spray bottle bottoms are contaminated and at risk of cross contamination if placed on food prep surfaces. Corrective Action(s): 1 - 3) These areas must be better maintained and kept drier to reduce build up of statgnant water. Clean up more often. 3) Mop sink design is not correct and is allowing water to spill into gap beside mop sink and onto lowest shelf. This area may require a corrective re-design to prevent water from spilling into gap. Best solution may be to dry and block off this space if spillage can't be controlled. Plan for corrections. Sewer gases noticeable but not as significant as previous inspections. Cooling units at or below 4 C. Freezers below -18 C. hot holding units above 60 C. handwash stations stocked and good. Sanitizer buckets replaced when i arrived except one. All measured at 200 + ppm at time of inspection. Washroom facilities ok.
