-Routine inspection conducted- Site manager reported re: grease trap over flow happend today, cleaning and maintenance is done before inspection.
- Hand-washing basins are stocked with hot/cold water, soap, and single-use towels
- Refrigeration temperatures are ≤4o Celsius
-Proper thermometers are provided
- Freezer temperatures are satisfactory
-Foods are properly stored , covered and labeled
-Dry storage room is organized no issues noted.
- Hot-holding units were not in use at time of inspection (pre-opening)
- Quaternary-ammonium food-contact surface sanitizer solution (Oasis 146) available at adequate (200-400ppm) at source- bottle was low manager changed it at time of visit.
- High-temp dishwasher (main and small one)achieved final rinse temperature of ≥71o Celsius (72.6C)
** Recommended to provide either max holding thermometer or thermo label to monitor temp of both dishwasher.
-Glass washer iodine measured at 25 ppm, chemical test strip was available.
- No sanitation concerns identified during inspection
- No pest activity observed during inspection
-Discussed allergy reporting and food prep - all good
-Discussed FBI reporting ( customer complaint) good process is in place.
