A routine inspection was conducted, the following observations were found:
- Coolers 4C or colder; freezers -18C; thermometers present; and temperatures monitored daily.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; date coded; stored in groups with proteins separate from other foods; and stored 6" off the floor on shelves or platforms.
- General sanitation level is good.
- No signs of pests.
- FoodSafe certified staff present.
- No expired foods found in use or for sale. FIFO rules being following.
- Proper cooling processes being followed for foods prior to packaging. Foods cooled in single layers, in shallow pans at room temperature and then placed in the cooler or freezer for storage.
- Bleach used for sanitizing, [Cl2] was 100ppm.
- All foods from approved sources or made on-site.
- 2-comp sink present for warewashing, and a domestic (sanitizing cycle) dishwasher present too. Staff explained that dishes are manually washed prior to placing in the dishwasher.
- All in order.
