Observation (CORRECTED DURING INSPECTION): Samosas made at 11am ranged from 21C to 31C. Hot holding unit was set to maximum and was at 54C. This is a repeat violation.
Corrective Action(s): Hot potentially hazardous foods must be stored above 60C to prevent the growth of pathogens and or the formation of toxins. Food items were discarded at the time of inspection (6 samosas, 10 pieces of chicken, 1 pepperoni pizza, and fries).

Observation (CORRECTED DURING INSPECTION): No bleach sanitizer was prepared at the time of inspection in the 3 compartment sink.
Corrective Action(s): When in operation, facility must have 100ppm chlorine sanitizer prepared to allow for sanitizing of equipment and utensils. Sanitizer at 100ppm was prepared at the time of inspection.

Observation: 1) Walk-in cooler was at 6C.
2) Hot holding unit was set to maximum and was at 54C. Unit has been turned on for over an hour.
3) Back handwash station cold water tap broken.
Corrective Action(s): 1) Service walk-in cooler and ensure it can maintain 4C or less at all times.

2) Service hot holding unit and ensure it can maintain hot potentially hazardous foods above 60C. Public Health Act Correction Order issued regarding the non-functioning hot holding unit. Hot hold unit is not to be used for the storage of hot potentially hazardous foods until Public Health Act Correction Order has been rescinded.

Comments

-Back freezer was at -18.
-Wall freezer was at -15.
-Kitchen prep cooler is no longer being used and was empty at the time of inspection.
-Handwash station in front area supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Public Health Act Correction Order has been issued for the hot hold unit. Hot holding unit is not to be used until the Order has been rescinded. Failure to comply with the conditions on the Order will result in the issuance of a violation ticket.
