Observation (CORRECTED DURING INSPECTION): Food stored in prep cooler were probed to be between 12C - 16C.
Corrective Action(s): All meat, egg, and dairy products stored in the prep cooler were discarded at time of inspection. Items discarded included: yogurt, milk, eggs, chicken, different types of meat curries, sauces. A few vegetable items (whole onions, ginger paste, dough and batter to be deep fried) were moved to a working cooler at time of inspection.

Observation (CORRECTED DURING INSPECTION): Chicken was found thawing at room temperature on countertop.
Corrective Action(s): Temperature of chicken was still under 4C. Staff placed chicken in a working cooler.
Ensure to thaw foods under cold running water or in a cooler over night. Do not thaw frozen foods on the counter at room temperature.

Observation: Prep cooler ambient temperature was ~11C - 12C.
Corrective Action(s): Repair cooler so that it is capable of maintaining temperatures at 4C or colder. Do not store any food in this cooler until it has been repaired. Ensure to monitor temperature with the thermometer that is available in this cooler.

Comments

- Hand sink in kitchen and in staff washroom supplied with hot and cold running water, liquid soap, and paper towels
- 3-compartment sink satisfactory; not set up for dishwashing at time of inspection
- Bleach sanitizer solution was available at 100 ppm in bucket
- All other coolers were measured to be at or below 4C; display cooler in front is not in use
- All freezer temperatures were satisfactory
- General sanitation satisfactory; some cleaning required of floors in hard to reach areas
- Food storage practices satisfactory, all food stored off the floor and covered
- No signs of pest activity noted at time of inspection
