209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1) Container of soya sauce was stacked directly on top of a container of dishwasher detergent.
2) Container of salted foods were stored directly next to the chemical dishwasher - potential contamination from the dishwasher water.
Corrective Action(s): 1) Ensure foods and chemicals are stored separately to prevent potential contamination of foods. Soya sauce and dishwasher detergent were separated at the time of inspection.
2) Ensure foods are stored in a sanitary manner to prevent potential contamination of foods. Container of salted foods was moved at the time of inspection.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Shelving units in front of the walk-in cooler and floor by the 3-compartment sink were lined in cardboard.
Corrective Action(s): All surfaces must be smooth, non-absorbent, and easily cleanable - cardboard does not meet any of these requirements. Immediately discontinue the practices of using cardboard to line surfaces.

Comments

-Walk-in cooler was at 3C.
-Walk-in freezer (used to rapid cool cooked foods) was at -17C.
-Customer area coolers in front of deli were at 4C.
-Cold holding unit temperatures are checked and recorded daily.
-Facility is no longer hot holding chicken. Customers can order chicken from 10:00 to 15:00 and chicken is cooked to order (deli closes at 1630). No hot holding at the time of inspection.
-Noodle sausage is still only sold frozen - facility is not selling the product cooked or hot held.
-Cooked foods are rapidly cooled in the walk-in freezer for approximately 1 to 2 hours, depending on size, followed by transferring in to the walk-in cooler to complete cooling. Sauce cooked this morning was at 4C.
-Chemical dishwasher had a final rinse of 50ppm to 100ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing).
-Quats sanitizer spray bottles properly labelled and tested at 200ppm. Bottles are refilled every 2 days.
-3-compartment sink Quats sanitizer was at 200ppm. Sink plugs available for manual warewashing.
-Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels. Improvements observed in staff hand hygiene.
-Equipment was found to be clean and sanitary.
-Raw meats were properly stored below or separated from ready-to-eat foods.
-Food scoops were stored in a sanitary manner.
-General sanitation good at the time of inspection.
-Facility serviced by a professional pest control operator. No signs of pests noted at the time of inspection.
-FOODSAFE Level 1 valid until Feb 20, 2024.
