Observation (CORRECTED DURING INSPECTION): Approximately 50ppm chlorine detected in two sanitizer buckets. 100ppm to 200ppm chlorine is adequate for achieving surface sanitizing.
Corrective Action(s): Please change sanitizer chemical, and monitor regularly to ensure adequate levels are present for surface sanitizing.

Observation: Mildew growth observed in corner hinges inside ice bin - this portion of the ice machine does not make direct contact with ice, however this must be addressed immediately.
Corrective Action(s): Please clean and sanitize ice machine as per equipment manual instructions to abate mildew growth. Monitor inside of ice machine going forward, and clean as needed.

- Burger patties, fries, and gravy all hot held over 60 degrees Celsius ***Reminder to keep lid on gravy hot holding unit closed***
- Walk in cooler holds below 4 degrees Celsius; no foods stored on floor, all foods in food-grade containers, protected from contamination ***Note: cardboard on shelving can interfere with air flow and sanitation***
- Walk in freezer holds below -18 degrees Celsius; good food storage practices observed
- Dry storage has all foods stored off floor on shelves; good organization
- No signs of pest activity throughout premise
- Staff washroom, front hand sinks, and guest washrooms are properly supplied for hand washing
- Ice scoops stored outside of ice bins throughout premise
- Hand washing and proper glove use observed during inspection
- No accumulation of grease or food debris
- 100-200 ppm chlorine available in three compartment sink
- Overall sanitation is good
