202 - Food not processed in a manner that makes it safe to eat [s. 14(1)]
Observation (CORRECTED DURING INSPECTION): - Inspector observed one staff in the dishwasher area with frozen imitation crab in a big bowl. Staff stated imitation crab is going to be mixed and the pink rubber gloves used for dishwashing was not changed.
Corrective Action(s): - Never process/handle food in the dishwasher area. Use different gloves for dishwashing and for food handling. Label the gloves or use different colored gloves for each purpose.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
- Operator did not state proper cleaning procedures for rice roll machine. It was stated that the machine is dismantled after closing and washed with detergent without sanitizing step.
- No chlorine detected with test strips in the bleach sanitizer in a bucket located at the sushi bar.
Corrective Action(s):
- After dismantling, ensure to run the pieces through the high temperature dishwasher to ensure proper sanitization has occurred. During usage, sanitize it every 2 hours with 100ppm chlorine sanitizer, wipe it dry completely before lubricating.
- Ensure sanitizer solutions are made fresh in the morning before operation starts and staff are frequently using it to sanitize food contact surfaces. Replenish the sanitizer bucket every 4 hours or sooner when the solution becomes visibly dirty.

Observation:
- Shelled raw quail eggs observed on top of ready-to-eat sashimi inside undercounter cooler at the sushi bar.
- Raw eggs in cartons observed on the top shelf in the walk-in cooler.
Corrective Action(s):
- Ensure to store eggs below ready-to-eat items during storage to prevent contamination.

Observation:
- Scrap garbages and food debris observed in walk-in cooler and walk-in freezer.
- Greasy floor throughout, especially at the floor junctions in the back kitchen and dry storage area.
- Mouldy interior surfaces of the ice machine.
Corrective Action(s):
- Discard all garbages and clean the floor.
- Degrease and clean the kitchen floor thoroughly.
- Turn off the ice machine, empty all ice out, clean and sanitize to remove all mould on the surface.

All coolers at 4C or above
All freezer units ranged from -8C to -22C.
Hot held food items (prawn tempura and miso soup) measured at 60C or above.
High Temp dishwasher measured at 77C during the final rinsing cycle.
Bleach sanitizer in a bucket (at the back kitchen) and in spray bottle (at the front) observed at 100ppm chlorine.
Vent hood in sanitary condition.
Monthly pest control management done by ORKIN - most recent report from March 2, 2022 suggest only fruit flies activity; no rodent activity cited.
No signs of pest activity observed at the time of inspection.


Note:
* Equip an extra sanitizer spray bottle next to rice roll machine for the purpose of sanitizing the machine every 2 hours.
** Reusable white gloves used for whole fish cutting is laundered on site with bleach and was being air dried on rack located inside garbage area. Drying of the white gloves in the garbage area is not allowed - ensure the gloves are dried in area where there is no risk for contamination eg. dry stroage area OR machine dry them off site.

Follow up inspection will be conducted on March 18, 2022 to ensure all the violations noted above are corrected. Failure to comply may result in issuance of Order and/or Violation Tickets.
