- Vegetable prep cooler is now at 4C. Tuna and milk stored in undercounter portion of cooler was probed to be at 3-4C, banana peppers stored in top inserts were probed to be at 4-5C.
- Temperature of cooler is set to coldest possible setting; monitor to ensure this cooler is capable of maintaining temperatures at or below 4C at all times, otherwise repair as needed.
- Reminder: Keep inserts only 1/2 full to promote better air circulation and keep top of prep cooler closed in between uses.
- Accurate thermometers available for monitoring temperatures
- Recommend to continue storing tuna in undercounter portion of prep cooler, and veggies/pickled items in top portion.
