209 - Food not protected from contamination [s. 12(a)]
Observation: * Food was found uncovered in storage areas in walk-in cooler and other coolers, unprotected from potential contamination. Also, bread being dried to use for bread crumbs must also be covered and protected from contamination. This was discarded.

Corrective Action(s): * Ensure food covered at all times in storage areas. This has been discussed on many inspections and must be adhered to to ensure food is protected from potential contamination.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: * Some build up of debris/grease/grime found under/behind food equipment through out kitchen areas and storage. These areas must be cleaned more frequently and maintained. Also, bar area has build up of debris/grime around base of floors that requires immediate attention too and more frequent cleaning.
Corrective Action(s): * Clean and sanitize all areas more frequently where build up occurred and maintain. Also, keep all cleaning records up to date at all times too.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: * Knives were found being stored in a cardboard box rather than a proper knife holder. Card board is not considered sanitary or a suitable contaner for storing food equipment.
Corrective Action(s): * Ensure all knives are properly stored in a sanitizable container or holder.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: * Upright cooler beside the salad bar has handles that are taped holding them together. These handles need to be easily cleanable and in proper working order.
Corrective Action(s): * Repair/replace handles at this upright cooler with new ones that are cleanable and in good working order and maintain. This is outstanding from last inspection.
