Observation (CORRECTED DURING INSPECTION): Sanitizing sink compartment half filled, dishware only partially submerged in sanitizer solution.
Corrective Action(s): Sanitizing sink must be filled with 100 ppm chlorine solution.
Sink is to be filled with sanitizer sufficient in depth to completely submerge largest items to be sanitized.
Items to remain in sanitizer for 2 minutes then removed to air dry.

Observation: Cleaning required: floor under ice machine, floor under 2 compartment sinks, floor around hot water tank and floor around both grease traps.
Mouse droppings observed around right grease trap.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.

Observation: Low temperature dishwasher is currently not operational.
Corrective Action(s): Repair / replace dishwasher to allow for automatic cleaning and sanitizing of reusable food utensils and equipment.
Low temperature sanitizing dishwasher must deliver 50 ppm chlorine during sanitizing cycle.
