Observation (CORRECTED DURING INSPECTION): The sanitizer spray bottle used for the front of house area was noted with > 200 PPM chlorine residual (test strip bleached out).
Corrective Action(s): Sanitizer spray bottle was diluted and detected with 200 PPM chlorine residual after the dilution.
Reviewed concentration for obtaining 100 - 200 PPM chlorine residual.

304 - Premises not free of pests [s. 26(a)]
Observation: Some mouse droppings were noted on the floor below the dishwashing area and new bakery area.
Corrective Action(s): Clean, sweep and sanitize areas noted with mouse droppings. As per operator, external pest control company comes in twice a month - continue to work with pest control company.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Overall sanitation has improved. However, large amount of grease buildup was noted on the sides of the deep fryer.
Black buildup still noted on the wall by the dishwashing area.
Corrective Action(s): Deep clean the above area and maintain in a sanitary condition after cleaning.
Suggest to paint over the wall in the dishwashing area after cleaning if some of the black buildup are stains.

Observation: Update has been completed at the facility e.g. new storage room built however no updated floor plan had been submitted to Fraser Health.
Corrective Action(s): Please email your district Health Inspector with an updated floor plan of the facility - including all equipment and dry storage area.
Most updated floor submitted must match the actual layout of the facility.

Routine inspection conducted today:
Handwash stations, including washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
In-use wiping cloths were submerged in sanitizer container - noted with 200 PPM chlorine residual.
High temperature dish machine was able to reach 180F at the gauge and 73.8C at the plate level during the rinse cycle.
Utensils and food contact items noted sanitary and in good condition.
Overall sanitation has definitely improved - keep up the good job.
Operator has a valid FOODSAFE level 1 equivalent certificate.
