Corrective Action(s): Do not use rags to dry/place foods. Transfer food directly onto clean dishes or use a single use towel.

Observation: Rodent droppings observed in dry storage area.
Corrective Action(s): Facility should be inspected for new activity daily and droppings should be removed daily and area should be sanitized.
Sanitize all food contact surfaces prior to using.
All food must be covered and in pest proof containers.
Pest control services are in place - good.

Observation: Ceiling tiles, vents, and fans in walk-in cooler have a build up dust/debris.
Corrective Action(s): Clean all tiles/walls/surfaces so that are visibly clean, and free of dust/debris. Correct by August 24, 2022.

Observation: Drawer coolers under grill registered at 13 C.
Corrective Action(s): Operator adjusted temperature setting. Temperature dropped to 9 C towards the end of the inspection. Ensure it is at 4 C or below within the next hour. Use food in this cooler within 2 hours or transfer to another cooler.

Observation: Some spray bottles with quats sanitizer have no label.
Corrective Action(s): Ensure all chemicals are properly labelled to prevent chemical accidents/contamination. Correct immediately.

Routine Inspection

Walk-in cooler at 4 C or below. Raw meats stored at the bottom shelves - good. Ensure all food containers are protected from contamination by using food grade covers/lids.
Walk-in freezer at -16 C.
Walk-in beer cooler at 4 C or below.
Prep cooler with inserts at 5 C - was being opened and closed at the time of inspection. Temperature must be at 4 C or below. Check again in 1 hour. Adjust if necessary.
Drawer cooler under grill was at 13 C. Operator had stocked cooler around 10 AM (inspection was done around 1130).hour. Re-locate foods if temperature does not drop to 4 C or below within the next hour.
Small cooler at 4 C or below and freezer underneath at -14 C (should be -18 C).
Hot held foods at > 60 C.
Hand sinks equipped with hot/cold running water, liquid soap and single use towels.
High temperature dishwasher registered at 71 C on plate surface during final rinse.
Bar glass washer registered at 25 ppm for iodine.
Surface sanitizer spray bottles - random bottles tested and all registered at 200 ppm for Quats.

Temperatures of coolers/freezers are not verified routinely. Ensure temperatures are taken daily and logs are maintained.
