Observation (CORRECTED DURING INSPECTION): Flattened carboard was placed on the floor under the spicer used to catch excess oil/liquid. Cardboard was visibly soiled and stained at the time of inspection.
Corrective Action(s): Cardboard was removed. Discussed this practice with assistant manager and staff:
> All floors and food contact surfaces must be smooth, non-porous and easily cleaned. Cardboard does not fit this description and is not allowed as floor liners.
> If a liner must be used when activiely using the spicer, it must be discarded immediately. Do not leave cardboard on the floor as a mat throughout the day.
