Paper towel and liquid soap are provided at hand washing sink
-Staff are wearing hair nets and clean apron/uniforms.
-hot holding units temp >6o oC
-All coolers and freezers are satisfactory (<4 oC and < -18 respectively)
-Accurate thermometers are provided
-Quats sanitizers >200 ppm available in buckets and at sink
- FS Specialist confirmed that "No duck drying" is done at room temperature
- General sanitation was satisfactory
-New cutting board is noted at BBQ duck cutting area -Good

* Discussed monitoring for rodent activity - to be continued diligently and send a report every 4 months for each department
* Discussed re: recycling and removing cardboard boxes of imported products as soon as a shipment is distributed to prevent any possible pest issues
