- Handsinks are accessible and have hot and cold water, liquid soap and papertowels to facilitate handwashing.
- Hot Holding Steam Table: ≥ 60C
- Rice Hot Holding: 71C
** Rice scoop stored in water between uses. Employee demonstrated that rice scoop is washed and sanitized every hour as premises does not have ice supply to be able to store scoop in ice water between uses.
- Prep Cooler: <4C
- Upright Double Door Coolers (x2): 4C
- Chest Freezer: -19C
- Food storage practices appear satisfactory. Food is protected from contamination.
- Wiping cloths stored in 200 ppm chlorine bleach sanitizing solution.
- 3-Compartment sink manual warewashing and sanitizing procedures reviewed with employee. Employee able to demonstrate procedures. Drain plugs available. 200 ppm chlorine bleach sanitizing solution used for sanitizing dishes and utensils.
- No signs of pest activity noted at time of inspection. *Keep kitchen exit door closed.
