Observation (CORRECTED DURING INSPECTION): Dipper well for ice cream scoops was switched off and dry at time of inspection. Used scoops were present in the well.
Corrective Action(s): Unit switched on during inspection. Ensure this is always kept on while dirty scoops are stored in the well.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): (1) No iodine sanitizer was present in the final rinse water of the bar glass washer.
(2) Sanitizer in cloth bucket measured at 50ppm quats.
Corrective Action(s): (1) Unit primed during inspection; all glasses run through machine. Ensure sanitizer level is checked daily, and corrective action is taken if it is not in the range of 12.5 - 25ppm iodine. Contact a technician and have the unit serviced by tomorrow (3rd August 2016).
(2) Discarded and replaced with 200ppm quats during inspection. Quats dispenser must be fixed by tomorrow (3rd August 2016).

Observation: (1) Quats sanitizer dispenser above mop sink is not operating at 200ppm (50ppm tested from unit).
(2) Spray arm is missing from main dish sinks. One tap is not operable without the arm, as water flows out of the top of the fixture.
Corrective Action(s): (1) Have the dispenser serviced by tomorrow (3rd August 2016). Call for reinspection once fixed - card provided.
(2) Have the arm replaced, or at least a temporary stopper installed in the top of the fixture to allow tap operation, by tomorrow (3rd August 2016).

*General sanitation satisfactory.
*Note: small number of fruit flies observed in bar area. Ensure strict sanitation is kept for floors, walls and areas where juices or other beverages are stored. Install fruit fly traps to reduce numbers.
*All cooler and freezer temperatures satisfactory. Thermometers available for all units.
*Organization of raw and ready-to-eat foods satisfactory.
*Cooling procedures OK. Ice wands available on site. Wands are kept off the floor in storage.
*Hot holding measured at or above 60 C.
*High-temperature dishwasher reached a sanitizing rinse temperature of > 71 C at the plate level.
*Quats sanitizer available from the dish sink dispenser at 200ppm.
*Hand sinks in kitchen, bar and staff washrooms equipped with warm water, liquid soap and paper towels.
*Minimal quantities of food stored at room temperature on the line during inspection. Ensure only what is required for the next two hours is kept at room temperature, and is discarded after this time.
*Drinks dispensers, cream dispenser, soda gun, ice machine and meat slicer in sanitary condition.
