Observation (CORRECTED DURING INSPECTION): Knives were stored in gap between countertops.
Corrective Action(s): Do not store knives in the space bewteen countertops and/or equipment, as these spaces cannot be easily cleaned and sanitized. Store knives on trays or knive holders/racks. Operator washed and sanitized all knives.

Observation (CORRECTED DURING INSPECTION): Soap dispenser at one hand sink (by the dishwashing area) was not working.
Corrective Action(s): Operator supplied the hand sink with another bottle of liquid soap.

Observation (CORRECTED DURING INSPECTION): One scoop was found stored inside rice bin with rice.
Corrective Action(s): Store all scoops separately from food to prevent contamination of food.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Lids of dry ingredient storage bins had accumulation of food debris. Floors in dry storage area and underneath kitchen equipment also had accumulation of food debris.
Corrective Action(s): Clean and sanitize all areas mentioned above, and do so more frequently. Ensure equipment and storage bins are pulled out to clean hard to reach areas. Staff began cleaning process of dry storage area and kitchen floors during inspection.

Comments

- All other handwashing stations were equipped with liquid soap with working dispensers and paper towels
- Walk-in cooler measured to be 2C
- Walk-in freezer measured to be <-18C
- Prep cooler measured to be between 3-4C
- Under counter cooler at front measured to be 4C
- Chlorine solution was available at 100ppm for sanitizing surfaces (in spray bottle and for soaking wiping cloths). Reminder to always soak wiping cloths in sanitizer solution when not in use.
- Broth was cooling at time of inspection. Reminder to cool from 60C - 20C within 2 hours and from 20C - 4C within 4 hours.
- Ventilation hoods were clean and free of grease build-up
- Dishwasher reached 71C at plate surface
- Permit posted in conspicuous location, FoodSafe certified staff on-site
- Temperature log for walk-in cooler maintained. Recommend keeping temperature logs for all other coolers and freezer as well.
