Observation: Few flies were observed in the dishwashing and bar areas. Fly traps are observed in place and a pest control company is contracted.
Corrective Action(s): Monitor fly population and contact the pest control company to install more fly traps if the population increases. Ensure doors and windows remain closed to prevent potential fly entry. Ensure all food is covered to prevent potential contamination.

Observations:

1. Temperatures:
- Walk-in cooler at 3'C
- Walk-in freezer at -19'C
- All coolers in cooking line at or below 4'C
- All freezers at or below -18'C
- Hot-holding equipment measured at >60'C
- Temperature logs are maintained
- Probe thermometer available on site

2. Sanitation:
- General sanitation of premise is satisfactory
- Hand washing stations supplied with hot and cold running water, liquid soap and paper towel
- QUATS sanitizer in pails measured at 200 ppm QUATS concentration with test strip
- High-temperature dishwasher measured at 72.3'C (above minimum required final rinse temperature of 71'C)
- 3-compartment sink available with drain plugs
- In-use utensils observed in ice baths
- Ice machine observed in good sanitary condition with scoop placed outside the machine

3. Storage:
- Dry storage area kept in good sanitary manner
- Equipment
- All food stored at least 6 inches off the floor
- All food observed covered
- Chemicals are observed stored away from food
- Ready-to-eat foods observed stored away from raw meats
- First-in-first-out method implemented (time stamps available on food containers)
- Pest control company contracted
