Observation:
Accumulation of food and grease found on exhaust filters, the walls behind and below the bbq, and the equipment and legs of equipment around the bbq. This will attract pests.
Corrective Action(s):
Scrub these areas with hot water, soap and bleach to remove the food and grease. Ensure these areas are cleaned every night before leaving the restaurant.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer was -16C; hot holding unit above 60C; and thermometers present.
- Low temperature dishwasher had [Cl2] of 100ppm. Dirty dishes are pre-washed in a soap & bleach solution, prior to going through the dishwasher.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; with raw proteins in a separate cooler than other foods; and 6" off the floor on shelves.
- All surfaces are in good working order, sealed, smooth, and cleanable.
- General sanitation level has been maintained and is satisfactory. Improvement needed in the mentioned area.
- No signs of pests.
- Owner is has completed the FoodSafe course.
- No expired foods found. FIFO rules being followed.
