Monitoring logs restarted *Add dishwasher monitoring to daily log. Record as a minimum chlorine concentration and confirm visually that soap is being dispensed into wash cycle. Clean knives now stored in a container. Once knife is used it is placed in the dishwashing area to be cleaned and sanitized. Once this is done the clean knife is returned to the container.
