Observation (CORRECTED DURING INSPECTION): Three small tubs of soup measured 33C. Staff stated it had been taken out of the hot holding unit at around 13:00; the time is now 15:00.
Corrective Action(s): Food must be cooled from 60-20C in 2 hours or less, and 20-4C in 4 hours or less. Ice water made at time of inspection and soups cooled.

Observation (CORRECTED DURING INSPECTION):
1) Tupperware of bacon, salsa and margarine sitting on top of inserts in prep cooler measured 8C.
2) Cream in thermos measured 6C
Corrective Action(s):
1) Do not double stack food items in prep cooler as temperature cannot be maintained.
2) Return cream to cooler. Fill a smaller amount for use and refill again midday. Ensure it is out of direct sunlight.

Observation (CORRECTED DURING INSPECTION): Sanitizer did not have any measurable chlorine. Staff stated solution was made 5 days ago.
Corrective Action(s): Make new sanitizer solution every day. New solution made at time of inspection, measured 200ppm chlorine.

Observation (CORRECTED DURING INSPECTION): Single-use gloves were being re-used.
Corrective Action(s): Gloves are single-use. Do not reuse. Hands must be properly washed before a new pair of gloves are used.

2) Label bleach spray bottle
