- Rack of buns was blocking handsink at the time of inspection.

- Do not obstruct the area in front of the handsink. Handsink should fully be accessible at all times.

Observation:
- Back door and front door were open.
Corrective Action(s):
- Ensure to have doors closed at all times to prevent pest entry. Doors were closed at the time of inspection.

Observation:
- Flour dust accumulation throughout the back bakery area. Build up observed on floors, containers, shelves etc.
- Food debris build up observed on racks in decoration area.
- Debris build up observed on multi door cooler base in the back bakery area.

- Clean the areas noted above. Facilitate deep cleaning of the facility.

Observation:
- Mechanical dishwasher at the coffee bar has "Out of Order" sign posted.
Corrective Action(s):
- Repair the dishwasher as it is designed to wash utensils being used for the coffee prep. All coffee are served using single use cups. Follow manual dishwashing method using 2 comp sink in the back until the dishwasher is repaired.

Comments

All handsinks are fully equipped with hot and cold running water, liquid soap and single use paper towels.
Bleach sanitizer available in spray bottles measured at 200ppm. One spray bottle at the back bakery area stripped out the test strip - ensure to mix 1/2 cap of domestic bleach to a spary bottle full with water.
QUAT sanitizer was also available in spray bottles - the original concentrate bottle indicates that the product is expired in 2019. Discontinue using this product.
All coolers at 4C or below.
All freezers ranged from -13C to -22C.
Meat slicer in sanitary condition.
Display cases in sanitary condition.
Manual dishwashing procedure reviewed with the staff - ensure to mix 150mL of bleach to the 2nd sink 75% full with water.
