Observation (CORRECTED DURING INSPECTION): One spray bottle of sanitizer was tested at 100ppm Quats.
Corrective Action(s): Staff emptied the bottle and refilled with fresh sanitizer solution at time of inspection. 200 ppm Quats detected. Ensure to change solution in spray bottles regularly, and to change solution in sanitizer buckets at least every 2 hours.

Observation (CORRECTED DURING INSPECTION): In-use sandwich knives were being stored in sanitizer.
Corrective Action(s): Discontinue this practice, as sanitizer that is not allowed to properly air-dry from utensils/surfaces will be transferred to food and potentially contaminate food. Store in-use knives and other utensils dry at room temperature, and wash, rinse, and sanitize in the three-compartment sink every 2 hours at a minimum.

- Three-compartment sink available and well-maintained for manual warewashing. Sink drain plugs available.
- All coolers were measured at 4C or colder
- Walk-in freezer measured at -18C or colder
- All hot-held food items were measured at 60C or hotter
- Food storage practices satisfactory. All food stored properly covered and off the floor.
- Accurate thermometers available. Temperature logs well maintained and up to date.
