Observation (CORRECTED DURING INSPECTION): Observed chicken nuggets in hot-holding unit at 45 - 50°C, Staff said that they were made 30 minutes prior.
Corrective Action(s): Hot potentially hazardous food must be stored at > 60°C. Staff directed to turn up the heat on the unit. Continue to monitor temperature.

Observation (CORRECTED DURING INSPECTION): Observed sanitizer buckets to be at 100ppm Quats. 200ppm is required to sanitize food contact surfaces.
Corrective Action(s): Educate staff on proper sanitizer concentration and using test strips to check concentration, must be documented daily. Solution must be changed regularly to maintain 200 ppm.

Observation: Observed no temperature-recording logs for coolers, freezers and hot-holding.
Corrective Action(s): Begin recording temperatures of ALL coolers, freezers and hot-holding units at least twice daily. Corrective actions must be taken when equipment is not performing as it should, as it may jeopardize food safety. To be corrected immediately.

Observation: Observed coolers and freezers to be overstocked with inadequated shelving to allow for air flow. Foods cannot be kept cold effectively and equipment is overworked.
Corrective Action(s): Declutter coolers/freezers. Ensure that coolers are < 4°C everywhere and freezers are < -18°C everywhere. To be corrected by week of 01-July-2019.
