Observation: Walk-in cooler measured 10 C. Broths measured 10 C, Deep fried spring rolls 10 C. Indicating guage on outside of cooler measured 10 C. Staff conducting operations business as usual.
Corrective Action(s): Discarded food items identified as at risk including:
- Broths (times 4 - four gallon pots)
- 1 bag of precooked spring rolls.
Move remaining to functioning cooler or freezer as described:
- rice noodles unopened packages;
- unopened tofu;
- meats just moved from freezer for cooling purposes;
**Discussed with staff.
Have service technician fix unit prior to using this unit.
Start tracking temperautres on walk-in cooler on daily basis. Keep records for auditing.
This will be checked.

Observation: No hot water in facility. On demand system seems malfunctioning. Checked several taps.
Corrective Action(s): Immediately have service technician service and repair system such that it can supply an adequate amount of hot water to all parts of premises at all times.
**Hot water is a must for food premises operation and must be immediately corrected before being able to serve food to the public.

Comments

Discussed issue with brother of owner. Explained that these significant issues, if identified by staff, should be immediately fixed prior to food premises operating to the public. Explained that a closure Oder will be issued and food discarded. He understood and said to work through staff on site for specific direction.
As discussed food not identified for disposal must be thrown out. Staff complied without issue.
