Observation: Upright freezer severly frosted and packed full of product. Temperature in unit ranged from -3 C to -20 C (lower area of freezer).
Corrective Action(s): Defrost unit completely so unit can reach proper freezing temperatures thoughout unit. This will be checked at follow up inspection date noted on report.

Comments

Floor below and around pizza dough prep and flour storage needs fine tuning to the cleaning process. The edge of the wall and floor was observed with a build up of flour residue. Daily attention to this build up will make overall cleaning easier and reduce the likelihood of pests infesting the facility.
