Cleaning has been done in walk in cooler (walls, floor), below pizza oven, and in ventilation hood.
Food bins have been cleaned and sanitized as required.
Another refrigeration system has been designated as personal use. Standing cooler (small) and this small chest freezer are both to be labelled "personal use only" and no restaurant food shall be stored in these systems.
Pizza prep cooler has been serviced. Maintaining 3C on warm side, 1C on cold side. Good! Keep it this way
Temperature logs are getting well maintained. Thank you! Maintain your daily checks, and service your refrigeration systems when they begin to malfunction (go above 40F)

Note: meat slicer partially cleaned last night, and left until today's shift. NEVER leave food equipment dirty before closing up! If food dries on, bacteria can form sanitizer resistant layers.
