302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
- High temperature dishwasher reached 54.2C max after 5 runs.
- No sanitizer available for the front sushi bar & back kitchen.
Corrective Action(s):
- Operator to use only single use takeout containers to serve food items until the dishwasher is repaired.
- Any items/equipment that needs dishwashing to be immersed in the 2nd sink filled with 100ppm bleach water after they run through the dishwasher. Immerse for 2min and then air dry. The sink was filled up to 75% with water and 1/4cup of bleach was added to make 100ppm bleach sanitizer at the time of inspection.
- 200ppm bleach sanitizer was made in a spray bottle and in a bucket at the time of inspection. Ensure 1/2 tsp of bleach is added to 1L of water to achieve correct concentration. Ensure there is always sanitizer ready for the sushi bar and the kitchen. Label the bottles as "sanitizer".

Observation (CORRECTED DURING INSPECTION):
- Back door was open upon the arrival of the inspector.
- Front door was left open at the time of inspection.
- Door screen for the back door has gaps at the bottom.
Corrective Action(s):
- Ensure doors are always closed to prevent pest entry.
- Install door sweeper for the back door screen. No sunlight should enter through the bottom gap. If this cannot be achieved, ensure the door stay closed at all times.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
- Vent hood panels observed with grease build up.
- Grease debris accumulation observed underneath stove, deep fryers.
- Heavy burnt debris build up on the stove and at the bottom of pots & pans.
- Floors in the back kitchen need cleaning.
- Water pooling observed by the hot water tank.
- Pink mould observed in the ice machine.
- Cooler & freezer rubber sealings need clean up.
- Cardboard boxes soaked with oil observed by deep frying station.
- Mouldy edges around sinks & faucets in the kitchen.
Corrective Action(s):
- Ensure a deep cleaning is facilitated throughout the facilities to address the issues noted above.
- Ensure cardboard gets discarded by the end of each day.
- Do not stack up pots & pans with heavy debris build up at the bottom. Remove the debris. Discard any that cannot be cleaned.

Observation:
- High temperature dishwasher not able to reach 71C or above during the final rinsing cycle to sanitize.
- Multiple sink faucets in kitchen are not secure and sways when handles are used.
Corrective Action(s):
- Repair the dishwasher so that the water temperature reaches 71C or higher during the final rinsing cycle. Do not serve customers using reusable dishwares or cutlery until dishwasher is repaired.
- Tighten the faucets.

All sinks are fully equipped with hot and cold running water, liquid soap in a dispenser and single use disposable paper towels.
All coolers at 4C or below.
All freezers ranged from -6C to -9C.
All hot held food items (miso soup, cooked rice) at 60C or above.

- Equip extra drain plugs. Premises need at least two drain plugs.
- Ensure all violations noted above are corrected by the follow up inspection date. Failure to comply may result in the issuance of violation ticket(s) and/or Order(s).
