Observation (CORRECTED DURING INSPECTION): - Handwashing sink in bakery area was blocked/obstructed by prep table which was situated in front of it.
This was noted previously on past routine inspection report.
Corrective Action(s): - Corrective action taken: Prep table was moved out of the way to allow access to handsink.
- Ensure handsink is always easily accessible for handwashing and is not blocked/obstructed.

Comments

- Premises and equipment maintained in a sanitary condition
- Handsinks in food processing areas supplied with hot and cold running water, liquid soap and paper towel. See violation above regarding handsink in bakery area being obstructed.
- Observed frequent handwashing by foodhandling staff in prep kitchen area.
- Employee changerooms/washrooms maintained with liquid soap and paper towel for handwashing.
- Coolers were operating at acceptable temperatures (4C or colder) and freezers were maintaining product in a frozen state:
Bakery:
- True single door cooler 4C
- Sliding door cooler 3C
- 2 door worktop cooler 2C
- 2 door undercounter cooler 2C
- 2 door reach in freezer -16C
Kitchen/Prep area
- 2 door undercounter cooler (near freezer) 4C

Warehouse

- Temperatures of cold storage units are checked and recorded daily
- Food in storage is protected from contamination (wrapped/covered) and labelled with date
- Ice scoop stored in sanitary manner. *Staff unsure when ice machine was last thoroughly cleaned/serviced. Ensure this is completed routinely.
- High temperature dishwasher operational. Final rinse measured 73.3C at dish surface.
- Quats surface sanitizer present in spray bottles and in use for sanitizing prep surfaces and clean in place equipment. Concentration of solution measured 200ppm
- Warehouse is organized with food items stored off of the floor on pallets or shelving.
- Pest control contract in place with regular service. No signs of pest infestation noted at time of the inspection.
