Observation (CORRECTED DURING INSPECTION): No sanitizer solution set-up at the time of inspection.

Food handler created a bleach sanitizer solution. 200 ppm chlorine residual was detected from the solution.
There must ALWAYS be a sanitizer solution set-up whenever food preparation occurs to allow food handlers to sanitizer their work surfaces/ equipment during the preparation process.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Missing paper towel by the front of house handwashing station at the start of the inspection.
Corrective Action(s): **Issue corrected at the time of inspection**
Manager placed a roll of paper towel by the front of house handwash station. All handwash stations MUST be accessible, equipped with hot and cold running water, liquid soap and paper towel at all time to allow food handlers to wash their hands when required.
As per Manager, a new paper towel dispenser was installed but has issue and was unable to load paper towel in the dispenser at this time.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Food in the walk-in-freezer (a container of broth and a bowl of cooked meat) stored unprotected.
2. Containers of condiments (star anise, sugar, coriander, etc.) stored unprotected in the dry storage area.
3. Food (box of carrots and coconut water) stored directly on the floor in the walk-in cooler.
Corrective Action(s): 1 and 2. All food, especially food with the intention of being stored for a prolong time period/ overnight, must be stored protected with a lid or plastic wrap to avoid potential contamination. This is important when there is a known fly issue in the facility. All food must be stored protected to avoid contamination by pests.
3. All food in the walk-in cooler must be stored at least 6 inches off the floor. This helps facilitate cleaning on the floor of the walk-in cooler.

Observation: 10+ flies noted throughout the facility - especially around the dishwashing area and dry storage area.
Corrective Action(s): Abell, an external pest control company, comes in every few months for inspection. Work with your pest control company to help deter and eliminate fly issue noted in facility. May consider increasing inspection frequency if more flies noted.

Observation: Mop bucket noted with dirty mop water.
Corrective Action(s): Discard the dirty mop water immediately after cleaning to avoid the breeding of flies.

Observation: 1. Grease buildup noted on the fume hood.
2. Mouse droppings noted in the cabinet below the front of house handwash sink, on the floor below the clean side of the dish washing machine area, below the 3-compartment sink and in the dry storage area (around the hot water tank).
Corrective Action(s): 1. Clean the fume hood and maintain in a sanitary condition.
2. Sweep, clean and sanitize all mouse droppings ntoed on the premises. This will help determine if mouse droppings are fresh or from a previous issue. Pest are also attracted to their own waste materials and will return if their droppings are not cleaned and sanitized to remove the odor from that location.

Observation: 1. Bowls noted being used and stored directly in bulk food containers (e.g. sugar, salt, peanuts, msg).
2. Box noted being used to stored cleaned and in-use trays, colanders and bowls.
Corrective Action(s): 1. Remove all the bowls from the bulk food containers and replace with proper dispeners with a handle. Dispensers are to be stored within the food containers with the handles extending out and not in contact with the food. This prevents potential contamination of the food from the hand to the handle/ bowl.
2. Discard the box and use an appropraite container or shelvings to hold cleaned dishwares to avoid potential contamination after washing. Box is not an acceptable material to be used in the facility.

Routine inspection conducted today:
Handwash stations (with the exception of the front of house station, see violation# 401), including staff washroom, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigerator units were at ≤ 4C.
All freezer units were at ≤ -18C.
Rice was noted > 60C in the rice cooker.
Low temperature dish machine was noted with 100 ppm chlorine residual at the plate level after washing.
FOODSAFE level 1 certificate available for staff on-site at the time of inspection - Expires August 4, 2024.
