Observation: Mice droppings noted in several areas: along the walls inside the walk-in cooler, around the outside perimeter of the walk-in cooler, under the 3-compartment sink, in the back storage area.
Corrective Action(s): Thoroughly clean all areas using bleach solution. A pest control company must be contracted out if it hasn't been already. Seal all holes/gaps to prevent pest entry into the unit.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: The wooden box under the pizza oven that's used to store empty pizza pans has caked on food and other debris.
Corrective Action(s): Stop using this box and remove it from the premises. Get a storage container that is not made from bare wood and can be cleaned properly.

Observation: There was only one employee at the restaurant during the time of the inspection and they did not have FS Level 1 certification.
Corrective Action(s): In the operator's absence, at least one staff onsite must have FS level 1 certification.

GENERAL COMMENTS:
Coolers are below 4 degC except for the pop cooler which is at 9 degC, but this cooler is only used to store pop.
Upright freezer temperature is -18 degC
200ppm bleach is available in a spray bottle but the bottle's almost empty. MAKE UP MORE SANITIZER SOLUTION.
Discussed dishwashing procedures. ENSURE THAT THE SANITIZING STEP IS BEING FOLLOWED PRIOR TO AIR DRYING.
Operator has FS level 1 equivalent certification

FOLLOW-UP NEXT TUESDAY. IF DROPPINGS HAVEN'T BEEN CLEANED UP FULLY, A CLOSURE ORDER AND/OR VIOLATION TICKET WILL BE ISSUED AS THIS IS A RECURRING ISSUE.
