Observation (CORRECTED DURING INSPECTION): Pizza sauce in rethermalizer at approx 50C. Staff stated that they had reheated sauce then turned it down after cooking. Unit set to "4", instructions on wall state to keep at "6".
Corrective Action(s): Unit turned up during inspection, ensure maintains 60C or higher after food is reheated properly.
