Observation: Hamburger patty temperatures are logged however, temperatures were logged for Friday when it's only Wednesday today.
Corrective Action(s): Ensure that staff aren't forging temperature numbers on the logsheet and that temperatures are being tested and recorded for the appropriate dates/times.

Observation: Some cleaning required.
Corrective Action(s): Clean under all the shelves in the back storage area; clean under the cooking equipment in FOH.

Observation: 1) There's a cooler missing in the front service area behind the POS stations. A new cooler was ordered and is onsite.
2) The cupboard behind the POS stations are falling apart.
Corrective Action(s): 1) Cooler to be installed tonight as discussed. Ensure it's maintaining a temperature of 4 degC or below prior to placing foods inside.
2) Get the cupboard fixed.

Freezers are below -18 degC or in defrost mode (foods inside are frozen to the touch).
Hotholding is above 60 degC
200ppm Quats is being used
3-compartment method of dishwashing is in place; warewasher has 100ppm Chlorine in the rinse cycle
Handsinks are fully equipped
Orkin is on contract. No droppings noted.
Manager on duty has FS Level 1 equivalent certification
Temperature logs are being maintained except as discussed.
Discussed hamburger patty prep procedures. No concerns noted.
Exhaust hood has been serviced. Next service date is in October.
