Observation (CORRECTED DURING INSPECTION): Bleach water sanitizer was not found during time of inspection. Sanitizer must be available and used for all food contact surfaces to kill bacteria/viruses and to prevent cross contamination.
Corrective Action(s): Sanitizer was prepared by employee using bleach and water during time of inspection. Sanitizer must be prepared at all times and measure 100ppm concentration in sanitizer buckets/spray bottles. If using sanitizer buckets then keep all rags in sanitizer. Label all sanitizer buckets/spray bottles.

Observation (CORRECTED DURING INSPECTION): Handwashing station is kitchen area near dishwashing sinks found to be missing paper towels.
Corrective Action(s): Employee replaced paper towels during time inspection.
Remember to replace paper towels in dispenser as soon as roll finishes.

Observation: Food ingredients in dry storage area are missing covers. All foods must be protected from contamination at all times.
Corrective Action(s): Cover all foods in storage areas. All containers should have lids that are foodgrade and sealable.
All food containers should also be labelled.

Observation (CORRECTED DURING INSPECTION): Back door was found open during time of inspection. Ensure back door is kept closed at all times or a screen door is installed to prevent the entry of pests.

Observation: Stand up freezer in kitchen preparation area found to be missing handle.
Corrective Action(s): Freezer handle needs to be repaired/reinstalled.

Observation: Light covers are missing in kitchen area. All lights must be covered to protect food from contamination.

Comments

Routine inspection.
Handwashing stations are equipped with hot/cold running water, liquid soap and paper towels (except see above noted violation)
All coolers are at 4c or below.
Insert cooler at 4c.
Under the counter cooler in back of kitchen at 2c.
Freezers at -18c.
Foods are being stored off the floor in storage areas and walk in cooler.
Dishwasher reached 50ppm concentration for sanitize cycle.
Employee observed to be wearing proper protective wear (ie. aprons)
Employee with foodsafe certification is available onsite.
Pest control is in place.
No pest issues noted during time of inspection.

The following requires operators attention:
1. See above noted violations
2. NOTE: Remember to always wash hands between tasks. Do not wipe hands on aprons/clothing/rags.
3. REMINDER: There should always be at least one person with foodsafe certification onsite at all times.
