Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Vegetable chopper stored on the metal wire shelving unit was observed to have food debris present over it. This chopper was not used today as per staff.
Correction: Disassemble and wash, rinse, sanitize, and air dry the vegetable chopper; Correct today. Staff member placed this chopper into the first compartment sink unit during the inspection.
Comments

Follow up inspection:
-200 ppm QUATS sanitizer was available inside the spray bottles at each work station.
-Vegetable chopper had been used today and was observed placed in the first compartment sink for ware-washing. Staff was aware to disassemble, wash, rinse, and sanitize the vegetable chopper.
-Handsink was properly supplied.
-Digital probe thermometer was in good working order.
