Spot check to ensure either dishwasher repair or continued use of manual ware washing setup. Dishwasher technician has not yet been on site for the repair. Manual ware washing station set up as per the provided posters. Sanitizer sink was prepared, measured 100ppm chlorine, and in use at time of inspection. Good Potato slicer cleaning mediocre - if product has had a chance to dry on, it becomes very difficult to remove. Soak the blades and wash again. After removing all food debris, sanitize using 100ppm chlorine. Dry foods have been covered - most scoops removed. 1 styrofoam bowl in use as a scoop, left in product. Please switch out to proper scoops with handles. Never store in product.
