Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Several food inserts in pizza cooler measured at 8C; in walk-in cooler at 6C and bar reach in cooler at 8.5C.
Correction: Please monitor food temperature as lunch rush nears end, and discard food if it maintains over 4C in the next hour.
Comments

Gas added to refrigeration units; walk-in cooler measured at 2C, pizza cooler at 4C and bar cooler at 3C.
Display thermometer also added to walk-in cooler.
No food spills observed. Ladles not stored inside food inserts.
Meat slicer maintained.
Motor has been ordered to be replaced for pizza oven.
Mice droppings previously identified have been removed. Glue traps added to areas where activity were identified.
Additional service provided yesterday, operator shall be forwarding service report to undersigned for review.
Overall sanitation has improved greatly and premises also reorganized. Please keep this up!

Note: gasket not replaced in three door pizza cooler as operator is planning to replace this unit. No concerns as long as the unit is of similar size and able to maintain at 4C or colder.
