Observation (CORRECTED DURING INSPECTION): A small container of cooked chicken was stored with the raw chicken.
There is missing light cover over the dishwashing area.
Corrective Action(s): Discarded cooked chicken at time of inspection. Do not store cooked chicken beside or with raw chicken. Re-train new kitchen staff to ensure this cross-contamination is avoided. Replace missing light cover or provide sleeves for the fluorescent light bulbs.

Comments

Hand wash stations equipped with liquid soap and paper towels.
Sanitizer (quats) measured 200 ppm.
Low temp. dishwasher had chlorine residual of >100 ppm at the plate surface.
Walk-in freezer was at -20 deg C. Walk-in cooler was at 0-2 deg C.
Prep line coolers were at or below 4 deg C.
Hot holding for gravy, hollandaise, etc. was above 70 deg C.
Temperature log was available and up to date.
Dry storage area was clean and organized.
No signs of pests noted. Fly strips and blue light installed to control flies.
Pest control monitoring in place.
Kitchen staff was wearing clean uniform, hair nets and observed washing hands.
Staff washroom and patrons' washrooms were in sanitary condition.
General sanitation was satisfactory.
Garbage disposal area was tidy and all bins were closed. No signs of rats/rodents were noted.
Items to address:
Copy of most recent pest control report to be provided
Fume hood/ventilation over cooking area requires servicing (sticker is outdated) - service every 6 months.
Containers of canola oil to be moved in the dry storage area
Reminder: Food Safe 1 taken before July 29, 2013 will expire this July 29, 2018. Please ensure that kitchen staff has valid FS 1 certification.
