Observation (CORRECTED DURING INSPECTION): Wiping rags were stored directly on food preparation area.
Corrective Action(s): Wiping rags are to be stored in a sanitizing solution and not directly on any food preparation surfaces as this may be lead to cross contamination.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): The only designated hand washing station in the kitchen was not easily accessible as it was obstructed with a shelving unit and undercounter prep cooler.
Corrective Action(s): Have the shelving unit and undercounter prep cooler moved back so the hand washing station is easily assessable.

Observation (CORRECTED DURING INSPECTION): Observed food handler hand washing with gloves and sprayed with an overhead spray hose.
Corrective Action(s): Hand washing with gloves on is not the proper way of hand washing. Disposable gloves must be discarded between different food tasks and when leaving a work station.

Observation: Rodent bait boxes noted in the kitchen and back exit door.
Corrective Action(s): Bait boxes are not to be used inside food premises area. Have the bait boxes removed and have live traps only.

Routine inspection conducted and the following were noted:
All cooler units at 4C and equipped with thermometers.
Walk-in freezer at -14C.
Chlorine dishwasher achieved a final rinse concentration of 100ppm.
Deli slicer maintained in sanitary condition.
General sanitation satisfactory.
100ppm chlorine solution used as sanitizer.
