Observation: During time of inspection, 'afghani pickles' were being sold at room temperature
- No documentation, labels, pH and water activity records available
Corrective Action(s): - Store these products in the display cooler until it is proven to be shelf stable
Any product being sold as 'shelf stable' require the following
1.) pH and water activity testing
2.) Labels including (Contact information, ingredient list, best before date, batch number, etc)
Environmental Health Officer will email information to operator

Observation: During time of inspection, mice droppings observed near garage opening and on shelving storing pickle jars and boxes
Corrective Action(s): - Call Pest Control Operator for service and assessment immediately
- Plug all entry points within facility
- Ensure to monitor area frequently, clean, remove and sanitize area frequently
- Provide invoice to Environmental Health Officer
