ITEMS FROM PREVIOUS REPORTS TO BE CORRECTED:
- Rodent droppings and dead mouse found in trap inside electrical room and liquor storage room. Notify Pest Technician. Clean rodent droppings up and sanitize floor. Use 200ppm Chlorine or equivalent.Organ ize areas. Items should be up off floor to better inspect for rodents.
- Cooling logs not filled out correctly. Discuss with newer staff. Cooling logs ensure food items are cooled in an acceptable manner and do not exceed the 6 hour limit; temperature logs must clearly show food items cooling from 60 to 4 degrees Celsius in 6 hours (stage 1 temperatures recorded but stage 2 temperatures were not)


ITEMS CORRECTED:
- Door Skirt for liquor storage room opening has been repaired

NOTE: Cockroaches observed on monitoring stations in liquor storage room. Nowhere else in restaurant observed. Continue to monitor and consult with Pest Control. Bait observed by inspector as well. Continue with baiting and diligent cleaning of all areas.
