Operator has purchased a new dishwasher and is waiting for it to be installed - thank you. Call for re-inspection once dishwasher is ready
Flooring has been redone under prep sink and washing machine - thank you
Flooring in dishwashing area is still under way - operator will be tiling this area
Staff have demonstrated proper dishwashing procedures - you may now use re-usable dishes. Be sure to allow for a 2 minute sanitizing soak in 100ppm Cl where dishes are fully submerged
Cardboard removed - thank you
Stairs and storage shelves have been painted - thank you. Be sure to also paint wooden hanging racks.
Sanitizer prepared at time of inspection - tested at 100ppm Cl in bucket with wiping cloths and in labelled spray bottles
Cleaning has mostly been completed - still required at cook line.
Operator will e-mail food safety plan and sanitation plan today
