- underneath the sink area
Corrective Action(s): Clean the areas noted above. Implement a regular cleaning schedule.

Observation: Surface sanitizer stored in spray bottle labeled as glass cleaner.
Corrective Action(s): Get a new spray bottle and properly label as "sanitizer" to prevent misusing the sanitizer. This will be verified during the next routine inspection.

Observation: Missing thermometer inside the domestic upright cooler in the back of the kitchen.
Corrective Action(s): Provide a working thermometer inside this cooler. This will be checked during the next follow up inspection.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: No FOODSAFE trained staff on duty. Could not verify FOODSAFE training or its equivalent.
Corrective Action(s): Keep copies of ALL FOODSAFE certificates on site for review. This will be checked during the next follow up inspection.

Comments

- General sanitation needs improvement.
- All handwashing stations (front/back) supplied with cold/hot running water, soap, and paper towels.
- Surface sanitizer available in spray bottles at 100ppm chlorine bleach concentration.
- Two compartment sink available for manual dishwashing. Sanitizer available at 100ppm chlorine bleach concentration.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity at the time of the inspection.

Temperature control:
- All coolers: < or = 4C
- All freezers: < or = -18C
- Hot holding: > 60C. Secondary cooking step for donairs.
- Begin daily temperature log for all coolers, freezers, and hot holding units.
