Bleach sanitizer buckets >100ppm as per test strips -operator will be checking concentration every 2 hours Food Safety and Sanitation Plans have been re-organized and completed: proper cooling, sanitizing methods, cooling methods, FOODSAFE Level 1 requirements, pooling of eggs -translated to chinese Operator will obtain more magnetic wall strips for the cleavers Thawing of fish observed over running cool water Cleaning has occurred on the kitchen shelves -upper and lower levels A few more staff have been FOODSAFE Level 1 certified -the rest of the workers due later this month -obtain copies of the certificates maintain at the restaurant and email to me
